Return to the origins
Driven by the passion to return to the origins through cultivation, requalification of land, the strong desire to re-experience the simple things and the urge to come in contact with the land, we then decided it was time to engaged in this ambitious agricultural project, the cultivation of the precious red spice called SAFFRON.
In this miraculous land of NEPI (60 km north of Rome) where the soil is rich and fertile, in 2016 we planted our first 50.000 crocus sativus bulbs and this year we grew up and planted 350000 bulbs.
Golden Color in every dishes
The saffron contains a carotenoid pigment, crocin, which imparts a rich golden-yellow hue which today are used by many famous international chefs in seasoning and enhancing the flavors of their specialty dishes. Recipes such as bouillabaisse, paella, risotto, aged cheeses, desserts & puddings, tea, bread, and extra virgin olive oil. Its unique flavor cannot be copied, unusually pungent aroma and intense color makes it unique. We have infused the saffron threads in our finest extra virgin olive oil.
It is also a rich source of Vitamin B2, riboflavin, carotenoids (anti-cancer) and contains traces of vitamins A, B, B1, B2 and C.
Rare and precious spice
The saffron crocus were planted in August and at the end of October we were already in full harvest. Beautiful flowers 20–30 cm shooting out of the ground each morning across the fields just a spectacle to see and touch. The organically grown flowers are hand-picked in the early mornings while still closed, they contain three intense crimson stigmas that remain captured inside. Once collected the stigmas (saffron threads) are extracted, one by one, selected and dried in special drying ovens. Once dried, the stigmas are packed in elegant glass jars certified for food use, sealed with a label and placed in small transparent boxes ready for its distribution. How to use
Saffron Threads
Place the threads (4/6 per person) in a cup of hot water or stock. Cover and leave to rest in infusion at least 40 minutes. Add the saffron liquid to the recipe at the end of the cooking process.
