Today we would like to propose a vegan/gluten free recipe, such as salad of potatoes served with green Beans dressed with Italian balsamic vinaigrette, simple to prepare and perfect for summer. Fresh and healthy, can be preserved for a few days. Which can enjoyed both at home or on a wonderful out at sea.
Ingredients for 2 person
Salad of potatoes and green Beans with Italian balsamic vinaigrette
- 2 potatoes, cutted into cubes
- 300 g small green beans
- 1 medium sweet onion, chopped
- 1 medium red tomato, sliced
- 2 Frutto d’oro Italian Balsamic vinaigrette Dressing (18ml)
- Parsley, chopped
- Salt and Pepper to taste
- Orange Slice Garnish
Bring a large pot of salted water to a boil. Add the potatoes and simmer until about 10 minutes (halfway cooked), add the green beans and cook till potatoes and beans are tender, about 5 minutes more. Drain in a colander. When the beans and the potatoes are just cool put both in a large bowl, add tomatoes and red onion, it’ time to shake Frutto d’oro Italian balsamic vinaigrette dressing and season the salad, add salt and pepper.
Toss well to coat the vegetables in the dressing, guarnish with parsley and Orange slice.
Serve cold.
